Bread Sauce
Bread Sauce is great with Turkey, along with Cranberry Sauce it is a must! Here is a really delicious, spiced recipe that will delight your guests.
Ingredients
500ml Whole Milk
3 Bay Leaves
Half an Onion
4 Cloves
Half tbsp Nutmeg
3-4 Whole Peppercorns
100g White Bread, cut into squares
25g Butter
Method
Bread that is a couple of days old is best for this, if it is fresh cut it at least an hour in advance and leave it on a wire rack to dry out a bit.
Take your Onion an push the Cloves into it. Add this to a pan along with the Milk, Bay Leaves, Nutmeg and Peppercorns. Bring this to a gentle boil and simmer lightly with the lid on for 5 minutes.
Take off of the heat and leave to stand and infuse with the lid on for 10 minutes.
Strain the liquid into a clean pan and add the Bread. Simmer, stirring occasionally, for 5 minutes or until the Bread has broken down and you have a thick rich sauce.
Add the butter and season with salt.
Serve topped with grated Nutmeg.
