Pancakes

With Shrove Tuesday just around the corner I thought it would be a good chance to give you a couple of ideas of things to do with pancakes. Whether sweet or savoury Pancakes are good food all year round and this is how to make them.





Ingredients

250g Plain Flour
1 Egg
500ml Milk
25g Butter, melted
Pinch of Salt

Method

Put the Flour in a bowl, make a well in the centre and add the egg, whisk this together and start adding the milk gradually. When you have a smooth batter whisk in the butter and season. If you have a few lumps you can strain the batter through a sieve. Leave this to rest for at least 30mins in the fridge. It will keep for a few days.



Heat a pan until it is hot and add some oil. I usually pour in enough oil for a good coating and then pour any excess off into a jug.

Pour in a ladle of your batter mix and swirl to cover the pan. Cook until you can see it has set up. Lift the pancake up, if it is nice and golden flip it to cook the other side.



Repeat this process with the oil and cooking the pancakes until you have enough. You can stack the in the bottom of a oven while cooking them (not hotter than about 100c).




To serve in the traditional way sprinkle the pancake with Castor Sugar and Lemon Juice. Fold into quarters and arrange on a plate (always odd numbers for good presentation). Sprinkle with a bit more Lemon and Sugar and serve.
