Burgers

Another classic family recipe. With all the recent press about supermarket meat standards, if you don't want horse in your burgers, make them. And here's how.






Ingredients


500g Minced Beef
1 Onion, finely diced
1 Sprig of Thyme
Tabasco Sauce
1 tbsp Worcestershire Sauce
1 Egg, beaten
2 tbsp Breadcrumbs
Salt and Pepper

Method


Heat a pan and fry the onion and thyme gently until soft and translucent. Tip them into a bowl and allow to cool, make sure they are cold before continuing as you will be adding raw meat and you could spoil the meat.



When cold add the minced beef, Worcestershire Sauce, egg, breadcrumbs and salt and pepper along with a good splash of Tabasco Sauce. Mix well to combine.

Using a pastry cutter shape them into rounds and put them on parchment paper and leave in the fridge for at least 30 minutes until set. You can freeze them at this point if you want.




Heat a frying pan or griddle pan until smoking and cook for around 6 minutes, turning over only once. You can also cook them on a barbecue. Serve in a toasted bun with some salad leaves and a good dollop of my Roast Garlic Mayonnaise.
