Butter

Here's a quick tip, how to make Butter. A lot of people (like me) find cooking very satisfying and when you start making more and more things it gets quite addictive. Making butter is not only very quick but it tastes so much better and you know it's not loaded with salt and artificial preservatives.







To make butter basically you need to beat double cream until it separates into liquids and solids. You can use a food mixer with the paddle attachment, a food processor with the blade or use electric beaters. You could do it by hand but that would be very hard work. Here's some photos showing the stages it will go through.









When separated lift out the solid butter and squeeze out any liquid. I tend to roll it in greaseproof by putting it in the middle of the greaseproof paper, taking one end and fold it over and roll it so the butter forms cylinder.  If you want your butter salted then put the salt on the greaseproof with the butter, when you roll it you will mix the salt through it.





Put it in the fridge and when set you can slice it into discs by heating the blade of a knife in hot water and cutting through, I find it is handy to have in the fridge this way.



If you want to serve it for guests at the table you could shape it into a Quenelle. To do this take a spoon in each hand heat them in hot water. Take the butter and run it between the 2 spoons to make the desired shape (see photo below). It's hard to explain, search YouTube for "how to Quenelle" and you will see a video showing you if you are unsure. It takes a bit of practice but it's worth taking the time as it gives a great result.
