Get those eggs out of the microwave! If you don't want grey, tough eggs give this a go. It takes about the same amount of time, it just tastes so much nicer.
2-3 Eggs per person
10g butter per 3 eggs
1 tbsp Double Cream or Crème Fraîche per 3 eggs
Put the eggs and butter into a pan. Put on a moderate heat and keep stirring making sure you get right into the corners of the pan.
Cook for a few minutes until the eggs start to thicken. To control the heat take the eggs off of the heat and put it back on as required.
Take off the heat while still quite soft, they will continue cooking in the heat of the pan. Add the cream to stop the cooking process and season.
I like mine with some sliced chilli, you could mix some chives through it, top with smoked salmon or have it how it is.
