Griddled Asparagus

Asparagus has a very short season in the UK. It is an amazing ingredient and is better cooked and served simply. Here is the first of a couple of ideas I will give you to use this wonderful product. And remember to use your local suppliers!





Ingredients


Asparagus, about 5 per person
1 Lemon
1-2 tbsp Olive oil
Eggs, 1 per person
Salt

Method


To prepare the asparagus hold them at each end and allow them to break, keep the woody ends to make a soup or sauce.



Put the asparagus tips in a bowl and add the oil and the zest of a lemon. Season with salt and mix well, leave for around 5 minutes.



Heat a griddle pan until very hot (you can use a frying pan or a grill if you prefer), add the asparagus and allow to cook through, turn them after about 90 seconds or when they are golden. Cook for about 3 minutes, do not keep turning them, just allow them to colour on each side. About 30 seconds before they are cooked squeeze over some lemon juice, for this amount I used a quarter of a lemon, you can adjust this if you want for your taste.



Serve topped with a poached egg.
